Dishes like Pork Adobo made with pork belly long-braised in soy vinegar with bay leaves, black pepper, eggs, scallions, and crispy garlic and Rambutan Salad with rambutan, pineapple, jicama, cucumber, corn nuts and peanuts grace Chef Anton Dayrit’s menu at Tradisyon. After attending culinary school at the French Culinary Institute in New York City and years cooking in New York City kitchens like Jean-Georges, Table, ABC Cocina, Mission Chinese, and more, Chef Dayrit partnered with two friends to bring the vision for this Filipino comfort food-style spot to life. The first location in Hell's Kitchen opened in Summer 2020. Urban Hawker is the brand’s second.
